Reduced Grape Juice and Sesame Seed Confection

Reduced grape juice(pekmez) 1 cup 250 g
Water 3 cups 600 g
Duru Coarse Bulgur 1/2 cup 80 g
Cinnamon 1 stick -
Cloves 5 whole -
Allspice berry 1 whole -
Flour 1 tsp 4 g
Cornstarch 1 tsp 4 g
Walnut meats 1/4 cup 25 g
Sesame seeds 1/4 cup 40 g

Servings: 4-6

Construction

Place reduced grape juice and water in saucepan;boil 10 mins.Add bulgur,cinnamon,cloves, and allspice; when bulgur is softened,stir in flour and starch diluted in a little water.Add crushed walnuts and roasted sesame seeds;cook till mixture thickens.Ladle into serving dishes and serve cool. Popular in Şanlıurfa.A firm mixture may be obtained by adding more flour and cornstarch.Spread on baking tin.Cut into squares,dust with cornstarch,and let harden,turning occasionally.Dust with starch to keep dry and store for winter.
