Tomato paste 2 tbsp 20 g
Chili pepper flakes 3 tsp 6 g
Salt 1 tsp 6 g
Duru Coarse Bulgur 1/4 cup 40 g

Construction

Clean purslane,chop.Peel onion,chop fine,Saute onion in fat till golden;mix in tomato paste and pepper flakes.Add purslane and salt;cover pan and reduce heat.When purslane becomes watery,add bulgur and simmer till soft.May be served hot or cold with yoghurt mixed with crushed garlic.

Note

Wild or cultured purslane may be used;ground beef may be added.Popular in a numberof areas.(Bayraç,Karaman)
