Green Tomato and Bulgur Stew

Vegetable Dishes with Bulgur

Green tomatoes 8-9 med 1000 g
Tomato 1 med 130 g
Green pepper 2 med 20 g
Dry onion 1 med 70 g
Olive oil 1/2 cup 100 g
Salt 2 tsp 12 g
Chili pepper 2 tsp 4 g
Hot water 1 cup 200 g
Duru Coarse Bulgur 1/4 cup 40 g

Construction

Wash tomatoes and peppers.Quarter green tomatoes(or,iflarge,cut into sixths or eights),slice thin(1/2).Remove skin from tomato,chop very fine and slice peppers thin,crosswise.Peel onion,chop fine.Place fat in saucepan,saute onion till golden,stirring occasionally.Add peppers,mix in tomato.Continue cooking for several mins,stirring chili pepper,green tomatoes,and salt.Pour in water,cover and bring to a boil,add bulgur.Simmer till bulgur and tomatoes are soft,25-30 mins.
