Construction
Detach cabbage leaves,rinseçBring 4 cups of water to boil,add 1 tsp salt and leaves;parboil.Drain leaves,reserving liquid,and chop small.Peel onion,chop very fine.Place in saucepan fat,onion,meat and saute till onions become golden and meat browns.Stir in 2 tbsp tomato paste or 2 chopped tomatoes and pepper flakes.Place cabbage on top,mix in lightly and add cooking liquid.Bring to boil,add salt,pepper,and bulgur.Simmer till tender.Serve with yoghurt combined with crushed garlic.
Note
May be made either with rice bulgur;spinach or purslane may be substituted for the cabbage.A favorite in many areas,this dish is known generically as 'borani' in Konya
