Spinach and Bulgur Stew

Vegetable Dishes with Bulgur

Ingredients Measure Weight
Spinach - 1000 g
Dry onion 1 lg 100 g
Olive oil 1/2 cup 100 g
Ground meat(optional) 1 cup 200 g
Tomato paste 3 tbsp 30 g
Chili pepper flakes 3 tsp 6 g
Water 2 1/2 cups 500 g
Salt 1 1/2 tsp 9 g
Duru Coarse Bulgur 1/4 cup 40 g

Construction

Clean spinach well,mince.Peel onion,chop very fine.Place fat,onion,and meat in saucepan,brown over low heat,stirring occasionally;stir in tomato paste and pepper flakes.Add water,bring to boil,stir in salt spinach.When partially cooked,add bulgur and simmer till bulgur and spinach are tender.Serve with yoghurt.

Note

May be made with rice in place of bulgur.May be cooked without addition of water.Popular in a number of areas.(Işık,Karaman)
