Green Bean and Bulgur Stew

Vegetable Dishes with Bulgur

Water 5 cups 1000 g
Salt 1 1/2 tsp 9 g
Dried finely sliced green beans (çırtma) 3 cups 100 g
Dry onion 1 lg 100 g
Butter(melted) 5 tbsp 50 g
Ground meat 1/2 cup 100 g
Green pepper 1 med 10 g
Tomato paste 1 tbsp 10 g
Chili pepper flakes 1 tsp 2 g
Duru Coarse Bulgur 4/5 cup 130 g
Ground black pepper 1/2 tsp 1 g
Garlic 1-2 cloves 3-6 g

Servings: 5-6

Construction

Place 5 cups of water in large saucepan,add salt and beans,simmer till soft.Drain beans,reserving liquid.Peel onion,chop very fine.Saute onion and meat in fat;stir in copped pepper.Mix in tomato paste,pepper flakes,and beans.Addwater to cooking liquid to total 5 cups,heat and pour over beans.Boil 4 mins,add bulgur,balck pepper,and chopped garlic;simmer till bulgur is soft.Serve hot with yoghurt.

Note

Fresh green beans may be used;1 large tomato may be substituted for tomato paste.One of the dishes of Gümüşhane and Bayburt regions.
