Bulgur Pilaf with Meat (II)

Dry onions 2 lg 200 g
Butter or margarine(melted) 6 tbsp 60 g
Stewing beef - 500 g
Tomatoes 2 med 260 g
Salt 2 tsp 12 g
Chili pepper 1 tsp 2 g
Water 3 cups 600 g
Duru Coarse Bulgur 2 cups 320 g

Construction

Peel onions,chopr vey fine.Place fat in saucepan,saute onion and meat.Add tomatoes,skins removed,chopped fine,lightly saute.Add hot water,salt and chili pepper.Simmer till meat is tender.Add hot water to liquid total 3 ucps and stir in bulgur;bring to boil,simmer till liquid is absorbed.Remove from heat,lay cloth napkin across top of pan; cover and let stand 20 mins.

Note

The bulgur may be sauteed in fat to taste,prior to boiling.Onions and tomatoes may be omitted;saute meat till brown;add bulgur,continue sauteeing briefly;add water and salt(Oflaz). Popular in many parts of the country. Halıcı(1990).
