Bulgur Dumplings Croquettes Patties

Ingredients Measure Weight
Duru Extra Fine Bulgur 2 cups 320 g
Lean groun meat 1 cup 200 g
Ground black pepper 1 tsp 2 g
Salt 3 tsp 18 g
Water 7 1/2 cups 1500 g
Eggs 2 100 g
Cooking oil 2 cups 400 g

Construction

Place in large bowl bulgur,meat,black pepper,and 1 tsp salt;knead thoroughly,gradually adding 2 cups of water till cohesive dough is formed(about 30-40 mins)Shape egg-sized peces of dough into balls between palms and flatten.Bring water to boil in large saucepan with remaining salt;boil patties for 10 mins.Remove with slotted spoon,dip in beaten agg and fry in hot oil.Arrange on serving dish and serve hot.

Note

May be prepared with cracked wheat (yarma) in place of meat.Önal,Malatya.
