Turkey and Bulgur Meatballs

Bulgur Dumplings Croquettes Patties

Ingredients Measure Weight
Uncooked turkey or chicken meat - 500 g
Duru Fine Bulgur 1 1/2 cups 240 g
Dry onion 1 med 70 g
Salt 1 tsp 6 g
Tomato paste 1 tbsp 10 g
Ground black pepper(to taste) 1/2 tsp 1 g
Chili pepper flakes(to taste) 2 tsp 4 g
Butter 1/2 cup 100 g

Construction

Pound thoroughly meat and bulgur with wooden mallet;add grated onion,salt,tomate paste,black pepper,and chili pepper flakes.Knead,occasionally wtting hands,till dough consistency.Form walnut-sized pieces into balls and flatten slightly.Saute in sizzling butter and serve hot.

Note

To speed up process,first moisten bulgur with 1/2 cup of hot water.Less fat required when cooked over low heat in covered non-stick frying pan. Evcen, Karaman.
