Bulgur Dumplings Croquettes Patties

Duru Extra Fine Bulgur 2 cups 320 g
Ground cumin 1 tsp 2 g
Chili pepper flakes 1 tsp 2 g
Tomato,pepper flakes 1 tbsp 10 g
Salt 2 tsp 12 g
Water 6 cups 1200 g
Flour 1/2 cup 55 g
Egg white 1 30 g
Sauce    
Olive oil 8 tbsp 80 g
Garlic 5 cloves 15 g
Chili pepper paste 1 tbsp 10 g
Tomato 1 med 130 g
Salt 1 tsp 6 g
Parsley 1/2 bunch 30 g

Construction

Place bulgur in large bowl with cumin,chili pepper flakes,tomato and pepper paste,and 1 tsp salt;pour over 1 1/2 cups of hot water and let stand 10 mins.Knead when softens.Add Flour and egg white;knead dough till elastic,occasionally wtting hands with cold water.Form hazelnut-sized pieces of dough into balls and make a shallow depression in the center with forefinger.Bring 4 1/2 cups of water to a boil,add salt,and patties;bring to the boil again and cook 5 mins.Arrange on serving plate.Saute crushed garlic in olive oil;stir in paprika or chili pepper paste,grated tomato,and salt;pour over patties.Wash parsle,mince,and sprinkle over dish.Serve with raw radishes,tomatoes,and mild or chili peppers.
