Bulgur Dumplings Croquettes Patties

Dry onion 1 med 70 g
Parsley 1/3 bunch 20 g
Lamb liver - 250 g
Lamb heart - 100 g
Duru Fine Bulgur 2 1/2 cups 400 g
Flour 1/4 cups 30 g
Chili pepper flakes 1 tsp 2 g
Ground black pepper 1/2 tsp 1 g
Ground cumin 1/2 tsp 1 g
Dried basil leaves 1 tsp 0,7 g
Salt 3 tsp 18 g
Water 10 cups 2000 g
Margarine(melted) 8 tbsp 80 g
Chili pepper 1 tsp 2 g

Construction

Peel onion and wash parsley.Grind liver and heart;place in large shallow pan.Add bulgur,flour,pepper flakes,black pepper,cumin,basil,grated onion,chopped parsley,and 1 tsp salt and knead well to form dough.Shape walnut-sized pieces into paties.Bring water to boil,add salt end patties,one by one,cover till water comes to a boil again:remove cover and stir gently.Cook patties till tender,drain;arrange on serving dish.Combine fat,chili pepper and drizzle over patties.

Note

In Cihanbeyli,Konya,yoghurt mixed with crushed garlic and salt is poured over the patties before drizzling the margarine and chili pepper.Also a favorite in Van.Kocaman,Bitlis.
